I'm not sure I could pick just one....but Scenes from an Italian Restaurant is the first one to come to mind....also The Stranger and New York State of Mind.

He's so great on the piano and there are so many songs that showcase his talent, but definitely "Piano Man" and "The Entertainer." I also have a soft spot for "River of Dreams" and "Lullaby (Goodnight, My Angel)."
