I liked to listen to any instrumental music that is related to any of the following:
Acid Rock
R&B
Jazz Fusion
Psychedelic Rock
Dream Pop
Shoegaze
Trip Rock
Latin Rock
Folk Rock
Jam Band
Celtic
Native American
Reggae/Ska/Rocksteady

I'd also really like something that blends any of those types of music with acoustic guitar.

EDIT: if you don't like any of the bands already mentioned, maybe instrumental isn't for you.

Check out Watussi by Harmonia, anything by Godspeed You! Black Emperor,

and I know that people with your taste in music usually like The Olivia Tremor Control.

Maybe the band Hammock also, or 65daysofstatic.

EDIT 2:I only know of one song that fits your description.

Unkle - The Piano Echoes
