Preferably artists that had notable careers prior to collaborating please.
I would not consider McCartney/Lennon, or Jagger/Richards as candidates here...thanks!

Although my answer would have more of a value if I knew of a lot of collaborations to be able to compare, one of my favorites would have to be Japan's David Sylvian with electronic musician Ryuichi Sakamoto, both on the single "Bamboo Houses" as well as for Sakamoto's contributions on David Sylvian first solo album Brilliant Trees(one of the albums I've been enjoying a lot from time to time for the last 4 years or so).
edit: Also,David Byrne and Brian Eno collaborating for My Life In The Bush Of Ghosts has to be one of the best things that has happened in the history of ambient/experimental music IMO.
edit2:To be honest,Eno with ANYONE,really:P,is always brilliant.

David Bowie and Brian Eno on the Berlin Trilogy: plenty underrated, yet Eno helped Bowie smash out of the glam rock mode and into experimental track. Bowie additionally has collaborated with Mick Jagger for a conceal of "Dancing interior the line," yet i assumed it replaced into self-indulgent, 2 superstars cavorting on point. Martha and the Vandellas sang it like they meant it.
